6 apples, peeled, cored and thinly sliced

2 tablespoons lemon juice

1/4 cup honey or pure maple syrup

1 teaspoon ground cinnamon

1/4 teaspoon sweet potato powder (optional, for thickening)

1 piece of low-fat puff pastry (available in supermarkets)

Step

Preheat oven:

Preheat the oven to 180°C (350°F) when the pie is ready.

Prepare apple filling:

Peel and core 6 apples, then cut them into thin slices.

In a large bowl, mix the apple slices with 2 tablespoons of lemon juice, 1/4 cup of honey (or maple syrup), 1 teaspoon of cinnamon, and 1/4 teaspoon of groundnut flour, making sure that all of the slices are evenly coated with these spices and syrup. Groundnut flour is optional, it can help thicken the fruit filling, but you can leave it out if you prefer the filling to be slightly more moist.

Prepare pie shell:

Take a piece of low-fat puff pastry, roll it out and place it in a 9-inch (23cm) pie plate.

Using scissors or a knife, trim excess puff pastry to fit the shape of the pie plate.

Layered pie:

Place the trimmed puff pastry in the pie plate, making sure it covers the entire bottom and edges.

Use a fork to prick a few small holes in the bottom of the puff pastry to prevent air bubbles from forming during baking.

Arrange the pre-processed apple slices evenly on the puff pastry. You can stack the apple slices, but make sure they are spread out as evenly as possible so the pie bakes more evenly.

Bake the pie:

Place the assembled pie in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and the apple slices are softened. You can poke the apple lightly with a toothpick. If it feels soft, the pie is ready.

Cool and enjoy:

Remove the baked pie and let it cool on the baking sheet for about 10-15 minutes.

Before the pie is completely cool, cut into even slices.
